A week-long exploration of ancestral cooking in Sicily. We'll discuss heirloom recipes and enjoy classes where we prepare traditional foods. Includes 3 cooking classes, a farm visit and a visit to a fishing village to learn about regional ingredients such as fish, capers and sun dried tomatoes. You may extend your stay on your own if you wish. Here's the program:
You arrive on Sunday afternoon at your convenience and settle into the accommodations of your choice. The day is yours to settle in and explore Noto on your own.
On Monday morning at 9AM We begin our week with a tour of the vibrant food market to shop for ingredients.
On Monday, Wednesday and Friday cooking lessons are held from 10AM to 1pm. Classes are small, hands-on, and make use of all-natural, organic, seasonal ingredients. Essential Sicilian techniques you may learn are pasta making, fish and meat preparation, antipasti preparation and pizza making. Lunch after the lessons is from about 1PM to 2:30PM and features foods prepared during the morning lessons. All lunches are three courses accompanied by local wines and served at a formally set table.
Excursions take place on Tuesday and Thursday and are led by professional English speaking guides:
Tuesday: the guide will introduce you to the traditional fishing village of Marzamemmi on (where Renée was a culinary guide on the Travel Channel)
Thursday: is an improvisational day devoted to the landscape and the countryside. We may visit an old mill or an agricultural food producer together. If weather permits, we'll go to a farm to explore the agricultural traditions and for a culinary demo and tasting.
During your free time in the late afternoons and evenings you may explore the undiscovered treasures as Noto (the Baroque jewel that is the setting of many Italian films), Siracusa (just a 40 min. drive from us) and the Duomo on Via Minerva which was a Greek temple and is now a church devoted to Santa Lucia. We can also suggest a local wine producer for a tasting of regional wines. You may easily explore these places on your own but if you prefer, we could suggest a local guide for you (for an additional charge as those are not included in our program).
Independent study may also be added on to the above program for an additional fee if you'd like to explore a specific topic that requires us collaborating with Chefs or Pastry professionals.

Note: Accommodations and transportation are not included, but we'll give you suggestions for family-owned guesthouses and B&Bs after you book the class.
