Marinade of Olive Oil, Oregano and Lemon

This sauce uses Sicily’s wild oregano, lemons and olive oil for a marinade that stimulates the appetite and is very aromatic.  It can be used for grilled fish, meats or shellfish. I tried fish with salmoriglio at a vineyard in Trapani a few years ago.

3/4 cup of extra virgin olive oil (Sicilian of course!)

3 tablespoons of hot water

2-3 organic lemons (for juice)

1 small bunch of parsley, chopped fine OR (about 3 tablespoons) 

2 garlic cloves (minced)

1 tablespoon of Sicilian oregano (you can buy dried Sicilian oregano online or in specialty shops)

salt and pepper to taste

Mix 3/4 cup olive oil with 1/4 cup of hot water, gradually adding the juice of 2-3 lemons, the parsley, garlic, oregano salt and pepper.  Once the sauce is emulsified, let it cook on a bagnomaria for 3 minutes. If you prefer, you may warm the olive oil first and then gradually add the water and other ingredients. Note: Do not heat the olive oil too much and do not bring it to a boil! Use a low flame. 

You may use the above marinade for fish, chicken, shrimp and vegetables. Simply marinade the seafood, meat or vegetables and then grill or broil. Buon appetito!
